Climber Of The Year....Goes To.......

Kourtney has been climbing for some time but this last week she is going crazy! She really wants to be on top of anything she can get on top of. It is so fun to watch her get upset when she can't quite get on top of something she is trying to climb. It kinda is scary and kinda not funny but when she stops her feet it really is so cute :)

I know everyone says they wish there kid couldn't talk once they start talking but I really am getting so excited for Kourtney to start talking. She says  baby things but I am excited for more! :) I am sure the next few months will be really exciting for us.

In May we will be taking our first trip as a family to Disneyland!!!!! Zach is not so excited but I am. I can't wait! I haven't been since I was little. I know so many things have changed. We are staying in a timeshare near the parks so that should make it nice with Kourtney. Zach's parents are going along with two of his brothers and 4 of Kourtney's cousins. I know McKenzie(Kourtney's 5 year old cousin) is excited to show Kourtney all the princesses!

I saw these really cute phone number bracelet's for emergencies. They are just little cute beads with your phone number on them so if your kid gets lost someone will know who to call. I think I am going to make them for the trip and let's hope we don't end up seeing how well they work.  

Zach and I have been taking the Dave Ramsey FPU classes and have been enjoying them. Next month we are going to try out the cash envelopes. I am nervous and excited to try it out! I will let you know next month how it goes!

Lasagna Cups

I found this recipe on a blog and it turned out really yummy! I love that they are pre-portioned lasagnas, takes the guess work out of knowing when to stop eating this yummy dinner :).



I posted this picture to my FB of the final product and a lot of people wanted the recipe so here it is:

Lasagna Cups By laurenslatest.com (I used this as an outline an then kinda changed it as I made it. Lasagna is so easy to make your own!)

Yield: 12

Ingredients:

For the sauce- (You could just use a store bought one also)

2 tablespoons olive oil
1/2 large onion
1/2 pound lean ground beef cooked and drained
1/2 red bell pepper, chopped
1 small zucchini, diced
2 cloves garlic, minced
1-6 oz. can tomato paste
1-8 oz. can tomato sauce {+1/2 can water to wash out can}
1-14.5 oz. can diced tomatoes
1 tablespoon dried basil
1/2 tablespoon dried oregano
1 bay leaf
1 teaspoon sugar
salt & pepper to taste

for the cheese filling-

1-10 oz. tub Philadelphia Italian Herb & Cheese Cooking Cream
1/3 cup grated Parmesan cheese
3/4 pound mozzarella cheese, grated & divided
1/3 cup ricotta cheese
1/2 teaspoon pepper
1 egg
21 lasagna pasta sheets
Directions:
For the sauce- heat olive oil over medium heat and saute onions, pepper, zucchini and garlic until tender, 5 minutes. Stir in cooked ground beef and tomato paste until well incorporated. Stir in remaining ingredients and bring to simmer. Reduce heat to low and cook 30 minutes or so. {The longer it cooks, the better it will taste!} This will be very thick.

For the cheese filling- stir all ingredients together excluding half of the grated mozzarella cheese. Set aside.

For the pasta- Bring large pot of salted water to boil. Cook pasta sheets 2 minutes less than package directions and drain. Place pasta on greased baking sheet until you are ready for assembly.
For assembly- Preheat oven to 350 degrees. Line 12 jumbo muffin tins with squares of parchment paper. If they don’t stay in on their own, that’s ok–the pasta will help with that. Line the edges of the muffin tins with 1 pasta sheet per cup. {Pasta sheet will overlap about 2 inches.} Spoon about 1/2 tablespoon of sauce into the bottom of each cup {#1}. Next cut 9 pasta sheets into quarters and press one of these pieces of pasta into the bottom on top of the sauce {#2}. Top pasta sheet with a generous tablespoon of sauce {#3} and then a generous tablespoon of cheese filling {#4}. Repeat this pasta-sauce-cheese layering one more time being sure to press out any air bubbles. Top these lasagna cups off with a 3rd piece of pasta, more sauce and the remaining mozzarella cheese. Bake for 25-30 minutes or until everything is hot and bubbly. Serve hot.

Wahoo Hooo 69 Weeks!

Is it true is my baby 69 weeks old? CRAZY!

Today she is 16 months old. I know I say this every time but man I just can't believe how fast she is growing up.

Kourtney's personality is really friendly and she loves snuggling with really anyone. She loves story time at the library and the nursery at church.



Kourtney went on her first train ride yesterday with her friend Payton who turned 3 yesterday!



Kourtney seams to be enjoying the BOB again as she is getting taller and can sit better in the BOB. Love this!

Kourtney Loves walking around with buckets on her head! She also likes to wear dad's caps. Silly Girl!





Kourtney Loves getting tickled and having empty water bottles squished in her face (the air)!

Kourtney is at such a fun age and she is a tough little girl. She bumps into a lot but always seams to have a smile on her face :)

Kourtney let me put a hat on her for the first time since she was a baby and learned how to pull them off :) She looks so cute in a hat!






Kourtney's hair is also getting really long and I love getting to put her hair in ponytail and pigtails :)

Sweet Tooth

Sweet tooth, sweet tooth, sweet tooth..... man! It gets me every time! So this time while dreaming of S'mores made with yummy Honey Maid graham crackers, Hershey's chocolate, and Jet-Puffed marshmallows.... I thought of this!!

Amazing diet dessert idea!!!!

Graham cracker per cracker is 65cal's (one serving is two sheets of crackers for 120cals)

One marshmallow 25cal's

Hershey's chocolate bar 1 square 17.5cal's (The whole bar has 12 squares and 210 cal's)

Total=107.5cal's Sweet! Waaaay better then a bowl of ice cream and 1,000's of cal's :)

Here is what you need...



Then Put one square of chocolate inside one marshmallow. Place in microwave for 10-20 sec's until it puffs. Take it out and put it between two crackers!

Easy-peezy!!!

Random blog post I know but I thought I would share my random craving invention :)







I suppose if you wanted to stretch the cal's even more you could use one half of a cracker and use 32.5cal's less :)

My 13.1 Minneapolis - Half-Marathon results

I don't think we will be getting a PR at the Shamrock but maybe we will try to break this the next half I run :)

Thanks Jordan for pushing me so hard during this race :) 1:57:32 is a decent race time :)

45/209 in my division :) I'll take it :) With my 9 month old baby :) Go me.. toot toot! I dont't always toot my horn but this was a job well done and I am proud of myself!

Daddy's Little Helper

Kourtney always wants to help daddy with whatever honey do project he happens to be working on.

Zach was hanging some new blinds in her room a few weeks ago and I caught her climbing up on the chair and hanging on to dads leg as her was hanging the blinds. What a cutie!!

We both are hoping she is just as anxious to help around the house as she gets older :) We shall see...



Love Waffles

Waffles, the homemade type in heart form. Because I love cute kitchen things, I couldn't pass up on a cute waffle maker that makes your waffles in to 5 mini heart waffles :)

I decided a long time ago I wanted to make a lot of Kourtney's baby food from scratch. Not for any crazy reason but really just because I love cooking and I love the idea of being able to provide her with the best nutrition possible. Not to say she hasn't had unhealthy things because in life I believe in moderation :)

I started making waffles for Kourt in big batches and freezing them when she was teething but they are a favorite snack of hers as well. I usually will take some with me if I have a lot of aaronds to run as they are quick, easy, and not so messy.

I get a lot of comments from other moms about what a good idea it is so I thought I would make a quick posting about them. I have made them from scratch when she was really little but now I use the Bisquick Heart Smart (White box). I add different things in each batch to kind of keep Kourtney's interest and also just to be able to provide her with more nutrition :)

So really easy to do. I can't believe more people don't do it for breakfast on the go. Poor the mix add what you'd like and pour into the waffle iron. I then lay them all out to cool. After they are cold, not cool. I stack them up and put them in a gallon size bag and off to the freezer to the freezer they go. If they are not cold when you stack them up and put them in the freezer THEY WILL STICK TOGETHER!!! So be patient....and let them cool all the way down! :)











Royer Park

Kourtney, Zach, and I discovered the ducks at Royer park a few weeks ago and are having the best time going there for a quick trip on the weekends. We just have been saving our old bread and taking whatever is left down to the park to throw in for the ducks. It is so fun because they come so close to us. The ducks must be really hungry, either that or we must smell good ;)

The park sometimes has a interesting crowd but has two great play structures and lots of swings. It is about 5 min from our house so it is easy to pop in the car and head over without having to really pack up everything. That makes it a great quick stress free thing to do on the weekends with baby K.





We Got The Runs

Last year I started a running group. A few weeks in the team and named It.... We Got The Runs! (Yes I picked the brown text for this post based off of the team name! LOL:) We started in August and now have over 30 people in our group. I have to admit I still haven't met them all since it is a informal running team meant to make new friends and find people interested in doing the same races you are.

I just started by adding friends who like running with me or with other people. Those friends have invited their friends and so on. I am so excited about our growth. Soon we need to make shirts or tank tops :)

Even if its just for fun and not a race we try to post a meet up at least once a week so people can come out and meet new friends or at least just get in a good workout!

We have some people in the group who haven't ran a race with us yet and some doing a race or two every month. It is so great to have such a wide variety of athleticism in the group. It helps people who are just starting not feel so shy to get up and come out and meet us even just for a short run. 

The next big race that is coming up is the Shamrockin' Half Marathon! It is this Sunday and we are so excited! I think we have like 10 people doing this one. Some going for a PR and some going just to finish their first half! So proud of all my teammates :)

Last night Zach and I had a little mixer at our home in order to encourage more people from the group to come out and meet new people in the group. We didn't have as many people come as we were hoping but we still had a good time and were able to meet a few new faces :)
